AKAI is a Japanese-Mediterranean restaurant on the 30th floor of the Cardo Hotel, one of Brussels' most striking dining rooms. We're looking for an experienced Sushi Chef to join our kitchen and work alongside our Head Chef, crafting nigiri, sashimi, and maki with premium, morning-fresh ingredients and precise technique.
This is a hands-on role in a high-volume, high-standard kitchen, at the heart of one of Brussels' most talked-about dining experiences.
What you'll bring
- 2+ years' experience as a Sushi Chef or in a professional sushi kitchen
- Strong command of sushi fundamentals: rice preparation, fish butchery (including whole tuna breakdown), nigiri, sashimi, maki, and plating
- Solid understanding of product handling, freshness control, and traditional Japanese technique
- HACCP knowledge and rigorous food safety practice
- Valid European or Belgian work permit
- Clean, precise, detail-driven work habits
- A team-first attitude and respect for kitchen structure
- Fluent in French or English (both is a plus)
- Availability evenings, weekends, and holidays
- Professionalism, discipline, and a positive attitude
